    Grilled Bread Appetizer With Figs and Goat Cheese

    Grilled Bread Appetizer With Figs and Goat Cheese


    Food is one of my favorite creative outlets. I love getting into the kitchen and experimenting with new flavor combinations, but at this time of year, the best “recipes” are often less about cooking and more about assembling a few gorgeous ingredients while they’re at their peak.

    This grilled bread with figs and goat cheese is exactly that. It’s sweet and salty with a satisfying crunch, and feels effortless—the kind of thing that looks impressive when you set it out for friends but takes five minutes to pull together. And since it’s practically a no-cook recipe and doesn’t require turning on the oven, it’s especially perfect for these lingering hot days at the end of summer.

    I first made this spread when our team came to Malibu to photograph our new collection for Casa Zuma. It was a busy week without much time for meal prep, so I picked up everything at the grocery store, grilled the bread, and piled it all onto a big serving board. Proof that the most memorable meals are often the simplest.

    Start With Really Good Bread

    This is one of those times when the quality of your ingredients makes all the difference. Start with thick slices of really good sourdough, country bread, or focaccia. Brush them generously with olive oil—this is not the moment to skimp—then grill over medium-high heat until golden and lightly charred on both sides.

    If you don’t have a grill, pour a thin layer of olive oil in a cast-iron skillet and pan-fry the bread until crisp and golden. Both methods are delicious.

    Add Something Creamy

    I used a soft herbed goat cheese, which adds a little savory flavor against the sweetness of the figs and honey. You could also use fresh ricotta, burrata, or a creamy blue cheese like Cambozola.

    The point isn’t to follow this recipe to a tee. Choose the soft cheese you love—or the one that’s already in your fridge.

    Layer on the Sweet and Salty

    Ripe figs are the star here, along with ribbons of prosciutto, fresh mint, and plenty of honey. I finish everything with a drizzle of olive oil and flaky salt. Salt on fruit is highly underrated—it brings out the sweetness and makes the entire combination taste more interesting.

    Arrange everything on a large serving board and let people build their own perfect bite. It’s relaxed, abundant, and exactly how I like to gather with friends.

    A Few Delicious Toast Combos to Try:

    Once you’ve grilled the bread, the rest is endlessly adaptable for your toast / crostini / bruschetta game. Swap in whatever fruit looks best at the market and use these combinations as a starting point:

    • Ricotta, nectarines, basil, flaky salt, and olive oil
    • Burrata, cantaloupe, prosciutto, flaky salt, and lots of cracked black pepper
    • Creamy blue cheese, pears, thyme, honey, and flaky salt
    • Goat cheese, strawberries, basil, honey, and flaky salt

    It’s a great formula to have in your back pocket for any gathering: grilled bread, something creamy, seasonal fruit, a fresh herb, and a sweet or savory finisher. I have a feeling you’ll find yourself making it all year long, and it’ll always feel fresh when you use what’s in season.

    Description

    This easy appetizer layers grilled bread with creamy goat cheese, figs, prosciutto, and honey. Ready in 10 minutes, it’s the sweet-and-savory bite to serve at your next gathering.


    • 1 loaf sourdough, country bread, or focaccia, cut into thick slices
    • Extra-virgin olive oil, for brushing and finishing
    • 1 8–ounce log soft herbed goat cheese
    • 8–10 ripe figs, halved or quartered
    • 4 ounces thinly sliced prosciutto
    • 1 handful fresh mint leaves
    • Honey, for drizzling
    • Flaky sea salt


    1. Heat a grill to medium-high. Brush both sides of the bread generously with olive oil.
    2. Grill the bread until golden and lightly charred, about 1–2 minutes per side.
    3. Arrange the grilled bread on a large serving board with the goat cheese, figs, and prosciutto.
    4. Scatter the mint over the figs, then drizzle everything with honey and a little more olive oil.
    5. Finish with flaky salt and serve immediately.
